What is it called when you want something that tastes really good ... but is also basically a big bunch of fresh, vibrant and pleasant vegetables? You call it Cashew Salad, that's what you call it.


This salad is checking all the boxes for me these days.

Lunch takes place and my internal conversation takes place as follows:

    I'm hungry.
    What would be great right now?
    No, wait, what would be super healthy right now? Because… mocha peanut butter pie?
    No, but what would really fill me?
    WAIT WAIT WAIT what about this salad with the sesame vinaigrette which is delicious AND healthy AND which satisfies me because it is full of friendly fats and good things?
    Yes! I love the salad!
    I love vegetables!
    I love life!

It’s a real transcription of my internal dialogue. These are the terms I can think of: an incredible taste, especially a healthy one, always fills me.

Dressing could be my favorite part of this mix.

It is an oil and vinegar vinaigrette that you can shake in a jar, sweetened with a little sugar, seasoned with a little sesame oil, and ... if you are me ... cremified with a spoonful of yogurt Greek. I don't know, for me, a salad dipped in vinaigrette just won't fill me up. I need a little more fat in my salads, so I just took my favorite retro vinaigrette (yell at Kim Harcey from the church cookbook) and creamed it with this milk yogurt whole, or, even on some occasions, mayonnaise.
